As you all know by now, at Vinny’s Italian Cafe in Baltimore, we take pride in serving the most authentic and high-quality ingredients. One of the most treasured staples in our kitchen, aside from olive oil, is Parmigiano Reggiano. A cheese so rich in history and flavor that it’s often referred to as the "King of Cheese." But what makes this Italian masterpiece so special? Let’s explore its history, unique production process, and why it stands apart from other parmesan cheeses.
The History
Dating back to the 12th century, Parmigiano Reggiano has been produced in Italy for nearly 1,000 years. Monks in the regions of Parma, Reggio Emilia, Modena, Bologna, and Mantua sought after ways to preserve milk for a longer period of time. Thus leading to the creation of our beloved Parmigiano Reggiano. Over time, the cheese’s reputation spread, and it became a sought-after delicacy across Europe. Today, Parmigiano Reggiano is a protected cheese, meaning it can only be produced in specific regions of Italy following strict guidelines.
But why is it so sought after and infamous? Italy has designated Protected Designation of Origin (PDO) status to this cheese. This ensures that only those made in specific regions with traditional methods can bear the name "Parmigiano Reggiano." This distinction protects its authenticity, just like other legendary Italian products such as Prosciutto di Parma and Balsamic Vinegar of Modena. Italy is renowned for its strict dedication to tradition and quality in food production, and Parmigiano Reggiano is no exception.
How Parmigiano Reggiano is Made
The magic of Parmigiano Reggiano lies in its meticulous artisanal production process. Here’s how it happens
Fresh Milk from Local Cows – Only milk from cows in the designated regions are used. They must be fed a natural diet free from additives.
Traditional Craftsmanship – The milk is mixed with rennet and whey to start the curdling process before being shaped into large wheels.
Aging to Perfection – The cheese is aged for a minimum of 12 months but often matures for 24 to 36 months. This enhances its deep, nutty flavors.
Rigorous Inspection – Each wheel undergoes a strict quality check by the Parmigiano Reggiano Consortium before being stamped with the official seal.
But What does it taste like?
The taste of real Parmigiano Reggiano is an experience like no other. It has a rich, nutty, and slightly fruity flavor with a complex umami depth. The texture is granular and crumbly, breaking into beautiful morsels that melt in your mouth. As it ages, the cheese develops a sharper, more intense taste with tiny crunchy crystals. This is the proof of its long maturation.
What Sets It Apart from Other Parmesan Cheeses?
Many supermarket cheeses labeled as "Parmesan" are not real Parmigiano Reggiano. As said in the above paragraph, only cheese made in Italy under strict regulations can be called Parmigiano Reggiano. True Parmigiano Reggiano contains only milk, salt, and rennet. NO additives or preservatives. The longer you age it the better it tastes. Many generic parmesan cheeses are aged for only a few months. Authentic Parmigiano Reggiano is aged at least 12 - 36 month. This is why other parmesan cheeses cannot compare to the authentic Italian flavor and crumbly texture found in real Parmigiano Reggiano.
